From last few days, I have been searching lots of Nan khatai recipes on the internet and found one simple recipe with made of both wheat flour and maida. One of my favorite cookies from childhood. when we were in School and visited to my aunt’s place in vacation; she used to make this Nan khatai and baked it in Bakery nearer her market area. Now I can say that my daughter also loves this biscuit, specially made by me. She is always asking with Nanakhatai for her school tiffin.

This super crispy and sweet  Nankhatai melts easily in your mouth. I have made this Nanakhatai in two batches and we have just finished those cookies in couple of days. This Diwali, you can surprise your friends and relatives to gift them homemade Nan khatai, just baked your cookies and perfectly wrap it with gift box and surprise your relatives. I have already planned to make this Nankhatai in pretty big quantity for us and to gift my near and dear ones.  I will definitely update the new pics of my next Nankhatai. Ingredient:

Wheat flour/ Atta – 3/4 cup
Maida/ All purpose flour – 1/4 cup
Sugar – 1/2 cup
Ghee/Clarified butter, melted – 1/2 cup (may not need all)
Elachi/ Cardamom – 1
Baking powder – 1 pinch
Cashew/ Almond/pistachios for decoration: 10 (I used cashew and Almond)

Method:

  1. Transfer wheat flour and all purpose in large mixing bowl.
  2. Add powder sugar and cardamom powder with pinch of baking powder in same bowl and mix all ingredients with hand or hand bitter.
  3. Add little by little clarified butter into the mixture to form dough. Mix it properly and make sure that you don’t need to add ghee directly. While adding ghee make dough like roti.
  4. Make a small ball around 12 -13 from that dough. Flatten it lightly and put + (cross) on the top of Nan khatai and apply cashew or almond. Or you can ground the pistachios and use that also.
  5. Pre-heat your oven. Grease your baking tray and place this nankhatai over it and bake it for 12-15 min on 190 deg C. It should not be change the color to dark brown just little golden on corner. Remove from the oven, cool it on wire rack.

Storage: Nankhatai have to be store in air-tight container to stay fresh and crispy.

Notes :  

  1. Do not bake more than 15 min.
  2. Ghee need to be vary as per flour. Do not add all ghee directly in the mixture. Add it little by little and check  consistency.

Paneer Tikka in Microwave Oven or Stove Top

Paneer Tikka is a delicious mouth-watering recipe who anyone can make on either microwave oven or on stove top (Tava). This recipe was my to-do list from last few days. We all love tandoori item in my home either it can be a vegetarian or non-vegetarian.

I made this tikka’s from basic ingredient which we normally use in our kitchen just excluding one or two like Kasuri methi (dry fenugreek leaves). I haven’t used kasuri methi before but it gives very different taste and nice aromas to the tikka’s. You can select spices as per your taste and have this as a starter or evening snacks. I used mild masala’s because of Prisha as she also like fried and chatapata items.

So here we go with our first recipe Paneer Tikka

Ingredient :

Paneer: 200 gm
Capscicum: ½ medium size
Tomato: 1
Onion: 1

For Marinade:

Hung Curd: 1 cup
Giner: 1 inch
Garlic: 7-8 piece
Kasoori Methi (dried fenugreek leaves ): ½ tsp
Garam Masala: ½ tsp
Red Chilli Powder: 1 tsp
Tandoori Masala: 1 tbsp
Chat Masala: 1 tsp
Tandoori Color: A pinch (if required)
Oil: 1 and 1/2 tbsp
Salt: as per requirement

For Garnish/Serving: Green Chutney

Instruction :

  1. Take a hung curd in large bowl and whisk it properly.
  2. Make the ginger garlic paste. Cut the paneer and vegetables in byte size cube.
  3. Add all ingredient in hung curd except paneer and veggies  (tomato, capsicum and onion). mix it properly after mixing add all paneer and vegetables into the mixture again mix it properly so all the mixture can properly coats to paneer and veggies.
  4. Keep this marinated paneer in the fridge at least for 1 hour to 3 hours. You can keep it for overnight as well.
  5. After an hour take this from fridge and if you have rotisserie option in your Microwave oven, than skewer all paneer and vegetables properly in rotisseries. (If you don’t have rotisseries option in your oven you can just apply oil on your baking tawa  or pan put all marinated mixture on tawa and baked it).
  6. Pour some oil on marinated Paneer.
  7. Select grill option and grilled it for 12-15 min till your corner of paneer starts golden and crisp.

Serving Method: You can serve this tikka’s with green chutney or have as it is. Your yummy Paneer Tikka is ready.

Notes :

  1. You can use wooden skewer as well just keep then in water for 1 hour before using which will prevent to burning skewers.
  2. I have used steel skewer for my fewer tikkas (I will update those pic later)
  3. Some people also add Besan/gram flour. I have not used in this recipe. it also gives you crunchy texture.
