In Maharashtriyan family, when we think about daily breakfast and recipes, our mind always comes on kanda pohe, sheera and upma. Upma is a salty version of sheera (suji halwa) with vegetables.

I have tried lots of upma recipes from rawa upma to oats and soya crunch upma. Here I come up with one more upma recipe Vermicelli Upma or we can say Sevai upma. This upma is more testy and healthier as the vermicelli is made from rice flour or wheat flour. I used rice vermicelli.

We can make this recipe with 2-3 version such as sweet or lemon upma. Here I have given plain upma with a little lemon juice.

Ingredient:

Vermicelli: 1 .5 cup
Oil: (1 tspn + ½ tspn)
Mustard Seed: 1tspn
Curry Leaves: 6-7 leaves
Chilies : 2-3 (as per taste)
Split Black Gram : 1 tbspn
Grated Coconut : 3tbsp
Coriander Leave:3 tbspn

Vermicelli or Sevai Upma Recipe:

  1. Measure 2 cup of Vermicelli and keep aside.
  2. Pour 7-8 cup of water in big vessel and boil it. Once the water gets boiled, add 1 tspn oil into water and stir well.
  3. Next add vermicelli in boiling water and boil for 2-3 minute until it completely done or same as instruction given on Vermicelli packet.
  4. Pour this in strainer and keep it in running water.
  5. Once it will get cool, spread it on plate.
  6. In non-stick kadhai, pour some oil. After 1 minute or so, add mustard seed. Once mustard seed get flattered, add split chillies, curry leaves and urad dal (Black Gram). Fry this another one and half minute. Once the urad dal gets little brown add boiled vermicelli and mix it properly.
  7. Add salt and sugar and stir it well. Cook for another 2-3 minute with lid. Add lemon juice and garnish with coriander leaves and grated coconut.

 

Notes:

  • We can add vegetables such as green peas, carrot etc. (as per our choice).
  • Adding oil while boiling water is an important step to get non-sticky upma.

Instant Dhokla Recipe | How To Make Instant Microwave Dhokla (Khaman)

DHOKLA

Dokla (Khaman) or savory steam cake is one of the famous Gujarati Snack that you will get in every snacks corner or restaurant. It has the combination of sweet, spicy, sour taste where you can get it from the ingredients like sugar, chilies, lemon juice etc. that we have added while making dhokla. It not very tough to make dhokla at home.

The traditional Dhokla required 7-8 hours of fermentation whereas here in instant dhokla, you just need 5-10 minutes for steaming. I have made this Dhokla in microwave so 3-4 minutes are more enough to get spongy dhokla. Just add curd, little baking soda and other spices in besan and your dhokla is ready. You will get yummy fluffy dhokla within few minutes.

Ingredients :

Gram flour : 1 cup
Semolina:1 tbsp
Water: 1/4 Cup (As per needed)
Curd: 1/2 Cup
Water:1/2 Cup
Turmeric Powder: a pinch
Ginger & chili paste: 1/2 tspn ( optional)
Salt: as per taste
Baking soda: 1 tspn

For Tempering:
Oil: 1 tbsp
Mustard seed: 1 tspn
Green chili, deseeded: 2 chopped
Curry Leaves : 7-8 leaves
Asafoetida : a pinch
Sugar- water syrup – 1/4 Cup

For Garnish:
Coriander leaves: 1 tbsp
Coconut: 1 tbsp

Lets Start with Instant Dhokla Recipe:

1. Take a bowl. Add gram flour, sooji, turmeric powder, ginger-chili paste, salt, water and whisk curd. Mix it well. Make sure it will not form lumps in the batter.
2. While mixing, add baking soda. Mix it again and keep this mixture aside for 5 minutes.
3. Pour this mixture in microwave utensil and microwave it 3-4 minutes or as per your microwave instructions or steam this for 10 minute on Gas Stove. Check with toothpick, if it comes out clean than it is ready. Remove from steamer or microwave. keep it for 5 minute until cool down. Meantime, prepare tempering.
4. Tempering: Heat oil in temper pan. Add mustard seed, green chili, curry leaves, asafetida. Let them splutter.
5. Cut them in piece and pour sugar-water syrup and tadka evenly. It will soak the sugar water and become sweet and fluffy.
6. Add chopped coriander leaves and grated coconut. Dhokla is ready to serve.

Storage/Serving Method: Serve with Green Chutney or Tomato Ketchup. You need to finish this in same day.

1.Always use fresh besan (gram flour).
2.You can avoid ginger-chili paste for original taste.

Besan Ladoo | How To Make Besan Ladoo

Besan Ladoo

Besan Ladoo is one of the mouth watering, nutritional and healthy Indian recipe. We always make besan ladoo in the diwali festival. It is easy to make ladoo with hands on ingredients in your kitchen.

I know two method to make ladoo’s. The one which first gram flour(Besan) is nicely roasted in a ghee and add granulated sugar into the roasted besan. Another method is to roast just besan and add sugar and melted ghee after besan completely get cool. This 2nd method is very fool proof method as it will not make ladoo very soft like flat besan mithai. (it happened with me previously  )

Purposely, I used 1st method here. To make ladoo healthier and nutritional, I have added cashew, raising and almond powder. It is very important to roast besan properly till it starts giving roasted aromas and also it will start releasing ghee from all corners of your vessel. (I purposely use non-stick vessel to avoid burning and become dark brown ladoo)

Here, I have given the measurement for small quantity (approx. 15 ladoo). You can double the ingredients to make it more ladoo and store in air-tight container.

Ingredient :

2 Cup Besan (Gram Flour)

1/2 or 1/4 Cup Ghee (add more if you need)

1 cup Granulated Sugar

2 Cardamoms, Powdered

5-6 Cashews, Crushed

2 tbsp raisins (as per your choice)

Let Start with Besan Ladoo Recipe:

  1. Take heavy bottom vessel or non-stick Kadhai. Roast besan for 10 minutes on low flame.
  2. Add melted ghee in the besan while continuously stirring the besan so it will not make any lumps.
  3. Stir it continuously for another 10- 15 minute till get nice aromas from the mixture. Add granulated sugar and cardamom powder and stir another 5 minute.
  4. Switch off the flame and add almond powder, cashew and raisins in the besan mixture. If you want you can use raisins later. I have used one raisin for one ladoo and add it later while making ladoo.
  5. Let it cool down this mixture. Once done, make the small ladoo.

Storage : Keep in air-tight container.

Chocolates are my weak point and ohh Homemade Chocolate is just icing on the cake although now I am avoiding chocolates due to health conscious and diet . I just love the homemade chocolates. When I was in collage day, one of my collage friend used to bring this chocolates made by her mom and shared with all the friends.

I have never thought to make chocolates at home due to its bit complexity for ingredient measurements and time. Actually, I can say right amount of ingredient is the key point of home-made chocolates.

Now-a-days, we are sharing and discussing lots of recipes in office lunch time. I got this simple four step recipe from my office friends. Thanks Vrushali & Poonam !! I will definitely share this chocolates with you.

Here I made Chocolate with exactly 3 ingredients. This chocolate is not completely from scratch but YES!! I can say that you just feel the happiness when you get the complete piece of homemade chocolate after refrigerate for 10 -15 minutes in freeze.

This is the right time to try this chocolates. Diwali is around the corner, just choose the mould and make your homemade chocolates to surprise your friends, family members & bachha company.

Ingredients:
1. Dark Chocolate Compound: 1/2 cup grated
2. Milk Chocolate Compound:1 cup grated
3. 1 teaspoon Butter

Garnishing : Cashew, Nuts, silver balls etc.

Recipe:
1. Add both the chocolate in medium size bowl. Mix it properly. Microwave it for 1 or 2 min to melt it properly. You can use double boiling method to melt the chocolate.
2. Double Boiling Method: Boil the water in large vessel and place another small bowl in the boiling water and add chocolate mixture in the small bowl. Stir this mixture until it melts. Once the chocolate get melt remove from the vessel. Mix it properly.
3. Add butter into the chocolate. Mix it again. You can add nuts, cashew or any types of decorative silver balls. Take the chocolate mould as per your choice. Pour mixture by small spoon in the mould.
4. Refrigerate this tray in the freeze for 10 -15 min. After 10 -15 minutes, remove from the freeze and demold all the chocolates. Yipeeee….. Chocolates are ready to serve!!!

Storage: You can store in freeze or outside as well in storage container or wrap it with nice gift wrap paper.
